Soy Protein Allergens

The protein in soybeans can cause allergenic reactions in susceptible humans and animals. Several studies have been reported on reducing the allergenicity of soy protein by changing the structure of the immunodominant allergen (P34) using food processing, agronomic, or genetic manipulation techniques. A review of these studies has been published for those interested in finding out more about soy allergens and their prevention.
